Crock Pot Potato Leek Soup
I’m obsessed with this recipe. It’s so good, that I was licking the serving spoon as I was cleaning up last night.
In a large Crock Pot add the following:
4 Med sized leeks. White part only. Thinly sliced
4 Med potatoes. Peeled/diced
4-6 C chicken broth
2 T butter
Set slow cooker on high for 6 hours. When soup is done puree with a hand-held mixer. I added some blue cheese on top.
Enjoy.
